1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 tbsp olive oil
4 cloves garlic, minced
1 medium onion, chopped
1 red bell pepper, chopped
1 (14.5 oz) can diced tomatoes, undrained
1 cup chicken broth
1 cup uncooked rice (long grain or medium grain)
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a pot over medium-high heat. Brown chicken and set aside.
Add garlic and onion; cook until softened. Add bell pepper; cook 2-3 minutes.
Stir in tomatoes, broth, rice, oregano, salt, and pepper. Bring to a boil, then simmer covered for 20-25 minutes.
Return chicken to the pot and stir. Cook for 5 minutes, or until heated through.
Garnish with fresh parsley and serve.
Notes
For extra flavor, try adding a pinch of red pepper flakes!
