  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup uncooked rice (long grain or medium grain)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • fresh parsley, chopped (for garnish)

Instructions 

  • Heat olive oil in a pot over medium-high heat. Brown chicken and set aside.
  • Add garlic and onion; cook until softened. Add bell pepper; cook 2-3 minutes.
  • Stir in tomatoes, broth, rice, oregano, salt, and pepper. Bring to a boil, then simmer covered for 20-25 minutes.
  • Return chicken to the pot and stir. Cook for 5 minutes, or until heated through.
  • Garnish with fresh parsley and serve.

Notes

For extra flavor, try adding a pinch of red pepper flakes!
