A comforting and easy-to-make peach cobbler using canned peaches. Perfect for a quick dessert!

Ingredients

Peach Filling

  • 3 15oz cans canned peaches in juice (drained)
  • 50 g brown sugar
  • 0.5 tbsp lemon juice
  • 1 tsp vanilla paste
  • 0.5 tsp cinnamon
  • 1 tbsp cornstarch
  • 0.25 tsp salt

Cobbler Topping

  • 188 g all-purpose flour
  • 100 g granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 113 g unsalted butter, cold (cubed)
  • 120 g cold milk
  • Milk for brushing
  • 1.5 tablespoons granulated sugar
  • 0.5 teaspoon cinnamon

Instructions 

  • Drain peaches for 10 minutes.
  • Toss peaches with brown sugar, lemon juice, vanilla, cinnamon, cornstarch, and salt.
  • Preheat oven to 350°F (180°C).
  • Mix flour, sugar, baking powder, and salt.
  • Cut in cold butter until crumbly.
  • Mix in cold milk until dough forms.
  • Place flattened dough over peaches.
  • Brush with milk, sprinkle with cinnamon-sugar.
  • Bake for 45 minutes until golden.
  • Cool for 10 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream for an extra treat!
