Ingredients

Crust

  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup butter (melted)
  • 2 tbsp light brown sugar

Cheesecake Filling

  • 8 oz Philadelphia cream cheese (brick-style, full fat)
  • 1/2 cup granulated sugar
  • 2 tbsp sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp freshly grated lemon zest
  • 1/2 cup heavy cream

Instructions 

  • Mix the crust ingredients.
  • Mold the crust into muffin liners.
  • Bake the crust (optional) for 5 minutes.
  • Make the cheesecake filling.
  • Whip cream and fold into filling.
  • Fill the crust with the cheesecake mixture.
  • Refrigerate until set for at least 4 hours.
  • Garnish and serve.
  • Store in the refrigerator for 3-4 days.
