Instructions 

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a large mixing bowl, combine the pumpkin puree, granulated sugar, vegetable oil, eggs, and 1 teaspoon of vanilla extract. Mix until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • While the bars are baking, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and unsalted butter together until smooth.
  • Gradually add the powdered sugar and 1 teaspoon of vanilla extract, and continue to beat until fluffy and well combined.
  • Once the pumpkin bars are baked, remove them from the oven and let them cool completely in the pan on a wire rack.
  • After the bars have cooled, spread the cream cheese frosting evenly over the top.
  • Cut into squares and serve.

Notes

For a spicier flavor, add more cinnamon or nutmeg to the batter.
