Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
In a large mixing bowl, combine the sugar and vegetable oil. Mix until well combined.
Add the eggs one at a time, mixing well after each addition.
Stir in the pumpkin puree, water, and vanilla extract until smooth.
Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
In a small bowl, mix together the sugar and cinnamon for the topping, then sprinkle it evenly over the batter.
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the pumpkin bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
