A rich and creamy pumpkin-flavored crème brûlée with a crisp caramelized sugar topping, perfect for fall desserts.

Ingredients

Dairy

  • 2 cups heavy cream
  • 1 cup canned pumpkin puree
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Eggs

  • 6 large egg yolks egg yolks
  • 1/4 cup brown sugar (for topping)

Instructions 

  • Preheat oven to 325°F (160°C).
  • Heat heavy cream, pumpkin puree, sugar, vanilla, and spice until simmering, then remove from heat.
  • Whisk egg yolks until pale, then slowly mix in the warm pumpkin mixture.
  • Strain mixture and divide into ramekins in a water bath.
  • Bake for 30-35 minutes, cool, then refrigerate for at least 4 hours.
  • Sprinkle brown sugar and caramelize with a torch before serving.

Notes

Ensure the water bath is hot to prevent cracking.
