4cupssliced peaches(fresh, frozen, or canned, drained)
2/3cupsugar(divided)
1teaspooncinnamon
1teaspoonnutmeg
1teaspoonvanilla extract
Cobbler Topping
1cupall-purpose flour(or gluten-free)
1tablespoonbaking powder
1pinchsalt
1/2cupbutter(melted)
1cupmilk(regular or almond)
1largeegg(or flax egg for vegan)
1tablespoonbrown sugar(lightly sprinkled)
1scoopice cream(optional but recommended)
Instructions
Preheat oven to 375°F (190°C).
Combine peaches, 1/3 cup sugar, cinnamon, nutmeg, and vanilla in a baking dish.
In a separate bowl, mix flour, baking powder, salt, and remaining 1/3 cup sugar.
Stir in melted butter, egg, and milk until just combined.
Pour batter over peaches and sprinkle with brown sugar.
