Ingredients

Peach Filling

  • 4 cups sliced peaches (fresh, frozen, or canned, drained)
  • 2/3 cup sugar (divided)
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Cobbler Topping

  • 1 cup all-purpose flour (or gluten-free)
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1/2 cup butter (melted)
  • 1 cup milk (regular or almond)
  • 1 large egg (or flax egg for vegan)
  • 1 tablespoon brown sugar (lightly sprinkled)
  • 1 scoop ice cream (optional but recommended)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Combine peaches, 1/3 cup sugar, cinnamon, nutmeg, and vanilla in a baking dish.
  • In a separate bowl, mix flour, baking powder, salt, and remaining 1/3 cup sugar.
  • Stir in melted butter, egg, and milk until just combined.
  • Pour batter over peaches and sprinkle with brown sugar.
  • Bake for 40-45 minutes, or until golden brown.
  • Serve warm with ice cream, if desired.

Notes

For a richer flavor, use brown butter in the topping. Adjust sugar to taste depending on the sweetness of the peaches.
