Delight in these buttery shortbread cookies filled with raspberry jam, perfect for a charming treat or gift.

Ingredients

Dough

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Filling

  • 1/2 cup raspberry jam
  • for dusting powdered sugar (for dusting tops)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Cream butter, powdered sugar, and granulated sugar until fluffy.
  • Add vanilla and salt; mix well. Gradually add flour to form dough.
  • Refrigerate dough for 30 minutes, then roll out and cut cookies. Cut out centers of half the cookies.
  • Bake for 10-12 minutes, cool, spread jam on solid cookies, top with cut-outs, and dust with powdered sugar.
