  • 4 pieces bone-in, skin-on chicken thighs (or chicken breasts)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 cup all-purpose flour (for dredging)
  • 3 tablespoons vegetable oil or butter (for frying)
  • 3 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk or heavy cream
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon thyme (optional)

Instructions 

  • Season chicken with salt, pepper, garlic powder, onion powder, paprika, and cayenne. Dredge in flour.
  • Fry chicken in oil or butter until golden, then set aside.
  • Make gravy: cook onions in butter, add garlic, then stir in flour to form a roux. Whisk in broth and milk, season to taste.
  • Return chicken to skillet, cover, and simmer for 20-25 minutes until cooked through and tender.
  • Serve hot with rice, mashed potatoes, or biscuits, garnished with parsley or green onions.

Notes

For extra flavor, add a pinch of thyme or hot sauce to the gravy.
