Ingredients

Dough

  • 1 3/4 cups all-purpose flour (spooned and leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar (plus 1/4 cup for rolling)
  • 1/4 cup granulated sugar (for rolling)
  • 1/2 cup unsalted butter (room temperature)
  • 1 large egg (room temperature)
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon almond extract (optional)

Instructions 

  • Cream butter and 1 cup sugar until light and fluffy, about 2-3 minutes.
  • Add egg and mix until combined. Mix in vanilla and almond extracts.
  • Whisk together flour, baking soda, baking powder, and salt. Add dry ingredients to wet and mix briefly.
  • Shape dough into 2-ounce balls, roll in remaining sugar, and place on baking sheet. Chill for 30 minutes.
  • Preheat oven to 350°F (177°C). Bake cookies for 11-12 minutes until edges are golden. Cool on wire rack.

Notes

Chilling the dough helps achieve a chewy texture.
