Indulge in the delightful fusion of classic strawberry shortcake and creamy cheesecake. This dessert features a graham cracker crust, a rich cheesecake filling, and a luscious strawberry topping.

Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter (melted)

Cheesecake Filling

  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 1 cup sour cream
  • 3 large eggs

Strawberry Layer

  • 1 box strawberry Jell-O ((3 oz))
  • 1 cup boiling water
  • 0.5 cup cold water
  • 1 cup whipped topping
  • 1 cup chopped strawberries

Whipped Cream Topping

  • 2 cups heavy cream
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract

Oreo Crust

  • 20 Golden Oreos (or vanilla cookies) (crushed)
  • 4 tbsp unsalted butter (melted)

Strawberry Jell-O Powder

  • 1 box strawberry Jell-O powder ((dry))

Instructions 

  • Preheat oven to 325°F (160°C).
  • Combine graham cracker crumbs, melted butter, and sugar; press into a springform pan. Bake for 10 minutes, then cool.
  • Beat cream cheese and sugar until smooth; mix in sour cream and vanilla. Add eggs one at a time, mixing thoroughly.
  • Pour the mixture over the cooled crust; bake for 45–50 minutes until slightly wobbly. Cool completely.
  • Dissolve strawberry Jell-O in boiling water; stir in cold water and chill until thickened. Fold in whipped topping and strawberries; spread over cheesecake layer. Refrigerate for 2–3 hours.
  • Whip heavy cream with powdered sugar until stiff peaks form; spread over the strawberry layer.

Notes

For a richer flavor, use full-fat cream cheese and sour cream.
