These delicious pecan pie cookies are a perfect blend of sweet, nutty, and buttery flavors, making them an ideal treat for Thanksgiving and holiday gatherings.

Ingredients

Dough

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup corn syrup
  • 1/4 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream butter, brown sugar, and granulated sugar until fluffy. Add eggs and vanilla, mix well.
  • Mix flour, baking soda, salt, cinnamon, and nutmeg. Combine dry and wet ingredients.
  • Fold in pecans, corn syrup, heavy cream, and chocolate chips if using. Scoop onto baking sheet.
  • Bake 10-12 minutes until edges are golden. Cool before serving.
