Ingredients

Cake Batter

  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup almond milk
  • 1/4 cup vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Filling

  • 1/2 cup powdered sugar
  • 1/4 cup vegan cream cheese
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Mix wet ingredients, then add dry ingredients until just combined.
  • Spread batter in a greased 15x10 inch pan and bake for 15-20 minutes. Cool slightly.
  • Prepare filling by mixing vegan cream cheese, powdered sugar, and vanilla until smooth.
  • Unroll the cooled cake, spread filling, then re-roll. Chill before slicing.

Ensure the cake is completely cooled before unrolling to prevent cracking.
